Monday Munchies: Avocado Halves With Spicy Seafood Salad
It is HOT outside! This is a perfect meal to keep you cool and feeling fresh. The seafood salad can be served on its own or on top of a green salad (we like it in avocados). A frozen seafood mix is an easy starting point for this meal, but roughly chopped pre-cooked shrimp could also be substituted for even quicker prep. Enjoy!
Perfect summer dish!
1/2 lb frozen seafood mix
Juice of 1 lime, lemon, or orange
1 tsp rice wine vinegar (optional)
1/2 cup olive oil
1 tsp fresh ginger, grated or finely chopped
1 4-oz. can diced green chilies
1 4-oz can water chestnuts, drained and chopped, or 2 stalks celery, chopped
1/4 cup shallot or red onion, chopped
1 carrot, grated
1/2 tsp ground cumin
1/2 tsp paprika
Salt and pepper
1/4 cup cilantro or mint, roughly chopped
2 avocados, halved lengthwise and pitted
1. Heat frozen seafood in a medium pan over medium-low heat. Mix together all other ingredients except avocado in a large bowl. When seafood is just cooked, toss with ingredients in bowl. Serve a very large scoop heaped on each half of an avocado, two
halves per person.
