Monday Munchies: Grilled Asparagus and Salmon Burgers

Happy Memorial Day! I hope you’ve had a wonderful and relaxing weekend (and perhaps the day off today).  While today often marks the start of summer vacation season we still want to remember the official meaning of the day which commemorates all U.S. Service Members who died while in military service.

Over the long weekend you might have gone out to the country, swam in your local lake, or just relaxed on your patio deck with your grill. Grilling is an easy way to cook up food that is good for you and your bathing suit body.  (Oh, just in case you still aren’t convinced interval training is the fastest way to looking great in your summer wardrobe check out Josef’s article, “Can I Save You 225 Minutes?”

You can grill your favorite protein and your favorite veggies!

Grilled Asparagus:

No real recipe here. Take your cleaned asparagus, bitter ends snapped off, drizzled some olive oil over them in a bowl, sprinkle with salt and pepper. Lay these on the grill against the grate so they don’t fall through. They only need to be on the heat a minute or two depending on how hot your grill is. They should just start to wilt when you take them off.

You can change this up by adding lemon zest before grilling or even drizzle with balsamic vinaigrette.

And if you are tired of a regular burger or they aren’t for you how about a salmon burger!

For the non-burger Lover!

Salmon Burger:

1 16 oz. can of salmon if you dont have fresh

1/4 cup sauted red onion

2 tablespoon dijon mustard (more or less to taste)

1 egg

salt and pepper

small bunch of parsley chopped

Directions:

Mix everything in a bowl until thoroughly combined. Split evenly into desired size patties.  Grill until cooked through.

-Makes 2 to 3 patties
