Monday Munchies: Spaghetti Squash and Chicken Sausage

Ingredients:
-1 spaghetti squash
-1 small onion
-1 pack of pre-cooked chicken sausage of your choice (we used Open Nature Sun Dried Tomato and Basil* and Open Nature Roasted Red Pepper and Garlic)
-1 garlic clove minced
-salt and pepper to taste
-Parmesan cheese
Serves 4.
Directions:
1. Preheat oven to 375 F. Chop squash in half lengthwise.
2. Place flat on a cookie sheet with rind side up. Prick the rind with a kitchen fork all over. Cook for 45 minutes or until rind is soft.
3. While squash cooks, prep and sauté the onions in a pan on the stove with garlic. Cook until translucent.
4. Cut sausage into large bit size pieces. Make sure chicken sausage is precooked. It if is just warm in the pan with the onions. If it is not, cook according to directions.
5. Once squash is cooked, let it cool approximately 5 minutes. Scoop out the seeds and slimy gunk; be thorough and get it all. Throw that part away.
6. Scrape the tines of a fork across the insides to separate the “spaghetti,” scoop out. Salt and pepper the “noodles” to taste.
7. Mix all together! Top with Parmesan. Enjoy!
