Monday Munchies:Paula’s Favorite Low-Carb Pizza Crust

First of all, THANK YOU PAULA! This is by far the best pizza crust I have made so far in my low carb life. It is so delicious that the first time I made it, I had a little too much! It is good all by its self or topped with your favorite pizza toppings. Enjoy!

Crust Ingredients:
- 4 eggs
- 4 oz cream cheese (1/2 package) at room temperature
- ½ teaspoon salt
- 1 teaspoon garlic powder
- 1½ teaspoon oregano or other Italian seasoning
- pinches of black and/or cayenne pepper
- 1 cup (or a little more) shredded Italian cheeses, at least half of which is a hard cheese (Parmesan, Assagio; I often use an Italian blend such as Trader Joe’s Quattro Formaggio.)
Preparation:
Heat the oven to 350° F.
1) Be sure the cream cheese is at about room temperature. Using a regular blender, food processor, or stick blender, mix the egg, cream cheese and salt until well blended.
2) Spread cheese in bottom of well-greased 9X13 pan. Pour egg mixture over the cheese.
3) Sprinkle the spices evenly on the crust.
4) Bake for 22-25 minutes, or until the top is browning.
5) Remove from oven, add pizza toppings, and bake until done – about another 10-15 minutes.
Makes 8 servings.
Nutritional Information: Each serving has 1.5 grams effective carbohydrate plus 11 grams protein, and 179 calories.

I made this recipe many times. I call it “Deep Dish Pizza Quiche”. It’s really delicious.
This was amazing!!! I put low carb sauce, onions, mushrooms, tomato and green peppers. This was better than any pizza I have tasted. Thank you for the recipe. I would have liked the crust a little firmer so if you have any ideas please share
